Applesauce Muffins

ApplesauceMuffinRecipe2I had a few people asking for the recipe to my homemade applesauce muffins that I posted on Instagram yesterday.  I do have to say, I love these muffins and think they complement this cool fall weather quite nicely.  Making these muffins together is one of mine and Boone’s favorite thing to do together.  🙂

Speaking of apples….our family is bundled up and off to Sky Top Orchard this morning to do some apple picking, hay riding, cider donut eating.  Best day ever.

Ingredients for batter:

1 1/2 cups oats

1 1/4 cups flour

1/2 cup firmly packed brown sugar

3/4 teaspoon ground cinnamon

1 teaspoon baking powder

3/4 teaspoon baking soda

1 cup unsweetened applesauce

1/2 cup milk (I use skim)

3 tablespoons oil (original recipe called for vegetable oil; I use coconut oil)

1 egg white

Ingredients for topping:

1/4 cup oats

1 tablespoon firmly packing brown sugar

1 teaspoon ground cinnamon

1 teaspoon butter melted

Directions:

Heat oven to 400.  Combine dry ingredients, mix well.  Add combined applesauce, milk, oil and egg white.  Mix just until dry ingredients are moist.  Fill muffin cups almost full.  Combine ingredients for topping and sprinkle on top.  The original recipe says to bake them for 20-22 minutes, but 17 minutes is what is good for my oven.  If I bake them too long, the muffins can be too dry for my taste.
